GENERAL PURPOSE OF THE JOB
This job requires the Twin Peaks Bar Back to clean and maintain all things related to the Twin Peaks bar and its unique beverage program. Each team member is defined by pride, extreme standards, and discipline when it comes to maintaining the Twin Peaks bar alongside the Twin Peaks Girl behind the bar.
THE UNIFORM
* Clean TP black hat facing forward at all times. Brim never bent.
* Hair must be kept clean. All hair must be kept underneath the TP hat.
* Clean shaven. Beards & mustaches are allowed, but must be maintained.
* Fingernails must be kept trimmed.
* Jewelry is not allowed to be worn in ears, face, around the neck or wrists.
* Head phones or ear buds are not to be worn.
* Clean non-faded/wrinkled TP kitchen shirt tucked in.
* Belt is required.
ESSENTIAL DUTIES AND RESPONSIBILITIES
The duties and responsibilities of a Twin Peaks Bar Back include, but are not limited to:
* Adhering to uniform standards
* Adhering to policies and procedures that maintain a clean and sanitized bar
* Maintain clean and organized stations and equipment
* Ensure HOH Standards, Safety and Sanitation, and GHS requirements are followed at all times
* Ability to work as a team
* Train using tablets or computer
* Ability to work in a fast paced environment
* Any other duty/responsibility that management may deem necessary
* Assisting with opening and closing duties including, but not limited to, restocking the bar with all necessary items, cleaning the bar, mopping, etc.
* Ensuring the bar is always well stocked
* Changing kegs, checking taps, and appliances to confirm they are working and in good repair
EDUCATION and/or EXPERIENCE
Proven experience as a Bar Back.
LANGUAGE SKILLS
Ability to communicate in English. Must be able understand the policies and procedures used to clean and sanitize a restaurant.

Ability to apply common sense and understanding to carry out simple one or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.

Must attend orientation and agree to policies and procedures as outlined in the Twin Peaks training. The Kitchen Prep/Salad Bar Attendant is a multi-function position responsible for assisting the Heart of House with preparing ingredients for recipes; and sets-up, maintains, and breaks-down the Garden Bar and dish machine area following Ruby Tuesday procedures and safety and sanitation requirements.
ESSENTIAL DUTIES AND RESPONSIBILITIES
• Cleans food preparation and production areas as required.
• Wash and clean fruit and vegetables for peeling, dicing, shredding, or slicing using kitchen hand-utensils and electric equipment following Ruby Tuesday safety procedures
• Measure and assemble ingredients and cooked items according to Ruby Tuesday recipes and menu specifications.
• Complete specific cleaning responsibilities and station maintenance including, but not limited to, the walk-in refrigeration, prep, and dry storage areas.
• Ensure the highest quality preparation and presentation of food items served on the Garden Bar.

ESSENTIAL DUTIES AND RESPONSIBILITIES
• Set up bar in compliance with policies, procedures and brand standards as outlined in the bartender playbook.
• Maintain clean bar including proper removal of trash, empty glasses, etc.
• Stock all liquors, beer, wines, mixes, garnishes, glassware and miscellaneous bar supplies
• Follow CHARM service model to deliver a great Guest experience
• Consistently work to meet or exceed sales goals to achieve Bar Tuesday Status
• Learn beverage recipes and menu to explain offerings, make recommendations and suggestively sell to our Guests
• Uphold the highest standards of beverage quality
• Prepare and serve drinks following policies and procedures, proper food handling and serving techniques, alcohol awareness, and federal, state and local regulations.
• Immediately notify management of incidents involving possible excessive alcohol consumption or an impaired condition.
• Process guest checks and payments in compliance with cash handling, credit card and accounting policies and procedures
• Report all tips in compliance with company policy and IRS regulations.
• Consistent professional and positive attitude and actions when communicating with guests and team
• Serve alcoholic beverages in accordance with the Ruby Tuesday Responsible Serving Statement Policy.
