Food Service Workers prepare simple foods according to standardized menus, recipes, or verbal instructions given by supervisor; makes salads, dressings, gelatin, toast, or sandwiches; grills sandwiches, pancakes, eggs, French toast, and hash browns and toast; cleans, cuts, and chops vegetables and fruits; slices meats, cheeses, and breads; cuts desserts; adjusts recipe quantities to eliminate excessive waste of food products; fills drink machines, mixes beverages, makes coffee, and prepares sack lunches or snacks; uses various types of commercial kitchen equipment such as mixers, slicers, and choppers; prepares simple desserts such as pudding, cobbler, and loaf cakes; slices and wraps bread and other baked items; checks for proper temperature of prepared foods with thermometer; observes food to be sure it is visually appealing and of high quality.
Additionally, you may transport food back and forth from the kitchen to the cafes, clean tables, mop floors, stock utensils, cups and beverages. Serve food from steam tables, fill 5-gallon buckets of ice for the soda machines, lift 30-50 lb. boxes of soda syrup and clean equipment.
Some cashiering duties may be assigned for less than ½ of your scheduled shift, as well as any additional duties assigned by a manager or supervisor.

Key Responsibilities
55% FOOD PREPARATION, SAFETY & SANITATION
* Perform routine food service duties, e.g. cleaning, dispensing beverages, serving prepared foods, stocking.
* Participate in the preparation of standardized food items and/or coffee drinks, as required.
* Ensure proper preparation procedures are followed in making all menu items by following recipes, and customer preferences, when called for.

* Assist student employees in policy and procedures for customer service, food safety, stocking, cash handling, proper food handling and preparation, and portioning.
* Emphasize cleanliness; role model and ensure students are following all sanitation guidelines, including hand washing, glove use, cutting glove use, sanitizing counter areas and equipment on a regular basis, sweeping, mopping floors, and disposing of trash throughout and at the end of shifts.
* Assist student employees in rotating stock and labeling open food items.
* Ensure that opening and/or closing procedures are followed.
* Assist student employees in the efficient and sanitary operation of the dish room to keep breakage to a minimum.
* Check-in with supervisor daily regarding tasks needing more attention to be completed.

5% INVENTORY/STORAGE
* Keep an adequate supply of plates, beverages, glasses, flatware, paper products and cleaning supplies in assigned work area
* Stock all assigned areas of service such as, but not limited to, salad bars, service lines, grab and go cases, other displays, and storage areas, to always keep full.
* Fill condiment, cup, and napkin dispensers, as well as trays, plates, and bowls to maintain service levels throughout meals.
* Put away warehouse deliveries as required.
* Rotate and properly store food, beverage, and non-food items. Label as needed.
* Keep storage shelves and service counters clean and neat.
* Notify senior/lead staff member when supplies need to be ordered.
* Assist with monthly inventory process as assigned.
5% MISCELLANEOUS
* Work cooperatively with other staff and student workers to complete daily tasks.
* Ensure security of products.
* Perform tasks in the dining unit as assigned, which may include: cleaning fryers, general cleaning and upkeep of restrooms.

55% FOOD PREPARATION, SAFETY & SANITATION
* Perform routine food service duties, e.g. cleaning, dispensing beverages, serving prepared foods, stocking.

Key Responsibilities
40% STAFF COORDINATION
* Duties will include planning work, assigning work, reviewing and approving work, scheduling, orienting new employees, assessing training needs, training, coaching, and recognition for student employees and lower level food service workers.

Key Responsibilities
40% STAFF COORDINATION
+ Duties will include planning work, assigning work, reviewing and approving work, scheduling, orienting new employees, assessing training needs, training, coaching, and recognition for student employees and lower level food service workers.
+ Assesses training needs of staff members and student employees and provides appropriate instruction.
+ Trains and directs students in the safe and proper use of equipment when other food service workers are not present.

+ Places orders with approved vendors to meet pars and fluctuations in business needs.
+ May receive and stock food for storage and refrigeration in safe, sanitary and orderly manner.
+ Assure that the work areas are kept clean, organized and sanitary on an ongoing basis as work is performed.
+ Updates recipes to make sure they are up to date in database.
+ May review ingredient inventories based on the menu cycle.
+ Coordinates the creation and use of allergen labels and price tags.

What We Require

Key Responsibilities
55% - Cleans galley including the brick grill, grease trap, hood vents, and steam table. Cleans mess hall (wipes tables and bulkheads, sweeps, and swabs decks). Cleans storerooms, refrigerators, freezers, and associated food preparation equipment. Washes dishes, pots, and utensils. Empties and cleans out trash and slop cans.
20% - Assists the Steward/Cook in preparing and serving meals. Makes salads, coffee, sandwiches, and other minor dishes as directed or required. Assumes cooking duties for limited periods of time in port while the Chief Cook is unavailable. Assumes cooking duties for periods at sea due to extenuating or unusual circumstances.
20% - Assists in collecting, receiving, loading, and stowing of Steward Department stores, supplies, and equipment as needed. Breaks out stores as required. Receives, stows, and issues clean linens. Collects, stows, and counts soiled linens. Cleans living quarters and heads, making up bunks as needed (typically after each cruise). During extended maintenance periods, is required to assist with light maintenance and painting on deck.
5% - Actively participates in fire, abandon ship, and man overboard drills. Fights fires, secures fire dampers, monitors fire boundaries, rescues personnel, and performs other shipboard emergency duties as required. Performs other duties as assigned for the safety, efficiency, and effectiveness of the ship. Other duties as assigned.

LICENSING/CERTIFICATIONS:
Merchant Mariner's Credential issued by the U.S. Coast Guard;
Food Handler's card issued by the State of Oregon, or it's equivalency;

Successfully complete First Aid and CPR Training;
Ability to speak, read, and write English;
Meet Coast Guard drug testing requirements

The ability to lift, carry, push, and pull objects weighing up to 40 pounds is required.
Ship Operations is a seven day per week operation; therefore, weekend and holiday work may be required. Shift and/or work assignment may change based on operational needs.
In the event of health risks to the working environment while at sea, Ship Operations may need to require quarantine periods and other health & safety requirements before employees join the vessel or begin work at sea to ensure continuity of business operations.

Job Summary
This recruitment will be used to fill future full-time, hourly, intermittent, limited duration or regular status (as needed) Ship's Assistant Cook positions in the Ship Operations unit within the College of Earth, Ocean, and Atmospheric Sciences at Oregon State University.
The Ship's Assistant Cook is one of two food service positions on OSU operated research vessels functioning to assist the Ship's Master in the efficient operation of the vessel by providing food and steward services to crew and scientists embarked.
The College of Earth, Ocean, and Atmospheric Sciences is an internationally recognized leader in the study of the Earth as an integrated system. It operates numerous state-of-the art laboratories and two oceanographic research vessels, the 199-foot ocean-going Taani, and the 54-foot coastal research vessel Elakha. The College has an annual budget of more than $50 million, with support coming from the National Science Foundation, National Oceanic and Atmospheric Administration, National Aeronautics and Space Administration and other federal agencies. It has more than 100 faculty, 200 graduate students and 600 undergraduate students. Graduate programs include M.S. and Ph.D. degrees in Ocean, Earth and Atmospheric Sciences; Geology; and Geography and a M.S. degree in Marine Resource Management.
