Position Overview: As the Head Utility Galley on a cruise ship, you will be responsible for overseeing and coordinating the utility galley operations. Your role will involve managing a team of utility galley staff, ensuring the cleanliness and proper maintenance of the galley, and supporting the efficient operation of the kitchen. Your leadership and organizational skills will contribute to maintaining a high standard of cleanliness, hygiene, and operational efficiency in the galley department.
Responsibilities:
Team Management:
Supervise and lead the utility galley team, including assigning duties and monitoring performance.
Provide training and guidance to the utility galley staff, ensuring they adhere to company standards and policies.
Conduct performance evaluations and assist in the recruitment and onboarding of new team members.
Foster a positive and collaborative work environment, promoting teamwork and professional development.
Cleaning and Sanitation:
Ensure the cleanliness and hygiene of the galley, including work areas, equipment, utensils, and storage areas.
Develop and enforce cleaning schedules and procedures, complying with food safety and sanitation regulations.
Monitor and maintain the proper functioning of dishwashing machines, cleaning equipment, and waste disposal systems.
Conduct regular inspections to ensure compliance with cleanliness and sanitation standards.
Waste Management and Recycling:
Implement effective waste management practices, including proper disposal and recycling of waste materials.
Coordinate with the Waste Management Department to ensure compliance with environmental regulations.
Monitor waste storage areas and coordinate waste removal and recycling processes.
Train and educate the utility galley team on proper waste management practices.
Equipment and Inventory Management:
Oversee the proper maintenance and operation of galley equipment, reporting any malfunctions or repairs needed.
Assist in conducting regular inventory checks and maintaining stock levels of cleaning supplies and chemicals.
Collaborate with the Storeroom Department to ensure the availability of necessary cleaning and utility supplies.
Assist in the proper storage and organization of cleaning equipment, utensils, and supplies.
Compliance and Safety:
Ensure compliance with company policies, procedures, and regulatory guidelines, including food safety and sanitation regulations.
Implement and enforce safety protocols, including the use of personal protective equipment (PPE) and safe handling practices.
Collaborate with the Safety Department to conduct regular safety inspections and promote a culture of safety awareness.
Assist in maintaining proper documentation and records related to safety and sanitation.
Communication and Collaboration:
Coordinate with the Executive Chef, Sous Chef, and other department heads to ensure smooth operations and efficient communication.
Collaborate with other galley departments, such as Stewarding, Culinary, and Provisioning, to address any operational issues.
Communicate effectively with other crew members and departments to meet operational needs and address concerns.
Provide regular updates and reports to the Galley Management Team regarding the utility galley operations.
Qualifications:
Previous experience in a supervisory or leadership role, preferably in a galley or hospitality setting.
Strong knowledge of cleaning and sanitation practices, including food safety regulations and HACCP principles.
Excellent leadership and team management skills.
Attention to detail and ability to maintain high cleanliness standards.
Effective communication and interpersonal skills.
Strong organizational and problem-solving abilities.
Flexibility to work long hours, including evenings, weekends, and holidays, as required on a cruise ship.

Position Summary
Assist the cook with various tasks while maintaining a clean, sanitized workstation, as well as, other cleaning tasks as assigned.
Duties And Responsibilities
ESSENTIAL
* Assist in the preparation of food for cooking by washing, peeling, weighing, measuring, and/or cutting when necessary.
* Assist in the maintenance of cleanliness, upholding a high standard of hygiene in the galley, mess room, and pantries.
* Wash dishes, flatware, pots, and pans by hand.
* Use cleaning supplies to wipe counter tops and sweep/mop floors.
* Store clean dishes, utensils, and cooking equipment in proper areas.
* Sweep, mop, clean, dust, and straighten up public areas of the vessel.
* Maintain sanitation, health, and safety standards set by industry guidelines.
* Assist in proper storage of perishable, frozen, fresh produce and dry or canned items.
* Keep inventory of supplies and inform supervisor when supplies are getting low.
* Inform supervisor when equipment is not working properly.
* Collect and process (wash, dry, and fold) vessel personnel's laundry as well as any other laundry items used on the vessel by personnel during their stay on the vessel.
* Clean and sanitize the showers, toilets, and laundry facilities throughout the vessel.
* Remove, and properly dispose of trash and garbage using the designated containers.
Qualifications
REQUIRED:
* One (1) year minimum related experience.
* Merchant Mariner's Credential (Z-card).
* Valid TWIC card.
* Knowledge of machines and tools including their design, uses, repair, and maintenance.
* Must have or be able to obtain a government security clearance.
PREFERRED:
* High School diploma or General Education Degree (GED).
* Vocational training.

WORKING CONDITIONS
This position is considered OFFSHORE WORK which is characterized as follows.
* Outdoors and indoors, day and night, as well as over/near water.
* Requires working on or near moving equipment and vibrating equipment.
* Frequently the humidity is above 90%, noise is over 85 decibels and the light is intense/glare.
* Potential exposure to open fire/flames/sparks.
* Constant exposure to airborne dust, fumes, and gases.
* Work surface is stable, height is elevated.
