We are currently searching for a Corporate Executive Chef to join our team. The Executing Chef will be responsible for the creation and maintenance of all Gelson’s menu items, including soups, salads, entrees, salad bar itemization, hot case items, picnic meals, holiday meals, wine bar menu and the catering catalog. The Chef will ensure that all Food Service products remain consistent in taste and quality and meet the Company’s quality standards and customer’s expectations.

Communicate well with all functions of the company to ensure timely and effective programs are put in place

Understand the workings of kitchen back of house operations including prep, process flow, ingredient and finished goods holding
Be the face of Gelson’s Culinary Brand in public relations and media as requested Develop and implement menus, including seasonal, online, in-store, and wine bar menus that fit the Gelson’s brand and goals of the Company along with health code policies & procedures. Direct and supervise all kitchen operations including back of house and front of house; instruct Food Service employees in product recipes, cooking, preparation of food. Lead and direct all internal catered events as required Ability to understand and influence the BOH culture Review policies and procedures regarding food handling, preparation, food safety and sanitation. Assist in the long-term planning relating to cuisine and menu in food service while meeting budgetary expectations. Plan menus around restaurant quality food and high customer expectations. Must be adept to develop menus, costing and food purchase specifications and recipes. Maintain a well-stocked inventory at all store locations and exercise wise cost control. Assist in the planning and administering of merchandise to the Food Service departments at all store locations. Must understand the workings of a kitchen operation regarding all equipment and is on top of the latest new trends in equipment Assist, coach and develop department and BOH kitchen managers in the instruction of other employees regarding recipes, cooking, preparation of food, and sanitation procedures. Possess astute skills in the organization and flow of Kitchen layouts and preparations processes. Support safe work habits and a safe working environment at all times. Must possess food handlers and food safety certifications. Must possess a proficiency in ordering and PARs to assist the department management in the review of sales data of kitchen items to determine reorder/prep amounts. Establishes controls to minimize food and supply waste and theft, while ensuring the department preforms at or below the shrink budget. Prepares necessary data for applicable responsibilities of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met. Responsible for developing Gelson’s catering program for customers and corporate clients, including menu creation and enhancements Work with Department Managers to effectively manage operational problems, including those regarding employee relations, cost containment and merchandising. Oversee sanitation and housekeeping in accordance with the Department of Health Services for all store locations. Other related duties and assignments as required.
Qualifications:
High school diploma or equivalent. Formal training in the culinary arts preferred. Seven (7) years cumulative experience in food service, three of which as a chef. Experience in the retail and/or supermarket field preferred
Skilled in all aspects of kitchen food preparation. Knowledgeable in the tastes and usage of ingredients. Ability to be creative and innovative. Highly effective organizational and time management skills and skilled in independently prioritizing, planning, coordinating, organizing, leading, and monitoring multiple organizational projects of a complex nature simultaneously and quickly adapting to changes in time frames. Ability to interface with all levels of the company. Ability to interface with vendors, customers, management and company personnel on a regular basis, to obtain or provide information. Job Summary:

Key Responsibilities:

* Develops and implements operational plans and systems to ensure that all contractual obligations are met
* Assists in implementing corporate and regional programs based on Company and Regulatory standards
* Develops and effectively communicates strategies for improving customer (Patient and Retail) satisfaction
* Provides training programs to ensure consistent, high quality food at the facility
* Develops Culinary Support Team within Region
* Provides on-going training to Regional Directors of Operations in the area of food quality, presentation and purchasing compliance
* Assists in roll-out of new products or programs as required
* Provides direction to Region Team to assure compliance with all Company purchasing programs and initiatives
* Completes all daily, weekly or monthly reports as outlined in the corporate policies and procedures on a timely basis meeting all prescribed deadline
* Visits units and completes reports in a timely manner (within 7 business days of actual unit visit)
* Manages budget in a fiscally responsible manner
* Participates in Patient Visitation rounds with facility management team during each site visit
* Performs other duties that may be assigned
* Heavy travel throughout the midwest to west coast as needed

Preferred Qualifications:

* Bachelor's Degree in Culinary Arts or Associates degree in Culinary Arts Degree with seven years progressive food service management experience. Extensive experience may be substituted for a degree
* Minimum of five years of progressive BOH food service management experience required
* Minimum of two years BOH food service management experience in a multi-unit setting required
* Minimum of three years healthcare experience depending upon formal degree and training, highly desirable
* Minimum of three years P&L experience in management capacity
* Expert knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation
* Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume
* Must be hands-on manager
* CEC (Certified Executive Chef) preferred
* 85% travel required
* Must be experienced with computers to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
* Must be willing to participate in patient/resident satisfaction programs/activities
* ServSafe certified required
