The Assistant Kitchen Manager supports this mission by providing oversight to the shelter kitchen during weekend and holiday hours (including covering three meals per day and snacks). Job Purpose: Under the umbrella of CAN, the Homeless Shelter's mission is to provide a safe, clean, and supportive community which helps stabilize homeless men, women, and families by promoting self-worth, providing linkages to community resources, and encouraging personal responsibility. The RA is responsible for enforcing the Shelter Resident Guidebook and assisting in providing a safe, clean, and supportive environment.
General Duties:
Prepare high quality and nutritious meals for homeless residents (including children). This includes maintaining a ServSafe Certificate and preparing meals in accordance with all MD health and safety requirements.

LOCATION
This position is base at Hebrew Home of Greater Washington, located 6121 Montrose Rd, Rockville, MD 20852.
OUR COOK POSITION
The primary focus of the COOK position is to provide direct cooking, and baking for residents, visitors and staff with the highest degree of quality care and customer service at all times, according to Kosher traditions.
Measure and assemble ingredients for menu items
Prepare meals during our dining hours according to Kosher traditions
Maintain accurate food inventories
Properly store food items at appropriate temperatures
Rotate stock items as per established procedures
Restock kitchen for subsequent shifts
Ensure that the food prep area and kitchen are cleaned and sanitized at the end of your shift
SHIFTS & STATUS
The COOK position is a full time position.
DUCATION & TRAINING
Must possess a high school or equivalent education.
Training in institutional food preparation.
Previous experience in large scale food preparation.
Knowledge of cooking methods/procedures, including types of preparation and related routines.
Must be able to read, write, speak, and understand the English language.

Full Time M-F with rotating weekends
JOB SUMMARY:
Prepares and/or preps food for patients or retail, follows recipes. Follows all food safety and quality standards.
ESSENTIAL FUNCTIONS OF THE JOB:
1. Ensures the production of cafeteria and patient meals; assures quality of food served as well as proper recipes, ingredients, and production totals.
2. Supervises departmental Storeroom activities and personnel.
3. Prepares food items as specified by recipes.
4. Assigns daily sanitation and food preparation duties to Food Production I's and II's; follows up to assure completion.
5. Keeps work area clean and organized; maintains sanitation of production equipment, counters, and utensils used; conducts routine inspections of production area.
6. Oversees uses and disposal of leftovers for cost control.
7. Checks on "pull to thaw" items and proper storage of perishable food products.
8. Trains assigned staff. Ensure all food is properly labeled and dated. Discard expired product.
9. Assists in employee performance evaluations.
10. Assures compliance of all regulatory requirements and departmental policies and procedures.
11. Assists in preparing weekly production employee schedules.
12. Leads production meetings as required.
13. Assists with menu development.
14. Fills requests, from cafeteria and tray line operations, for back-up and additional items.
Complies with regulatory requirements; maintains established departmental policies and procedures, including those pertaining to infection control, quality assurance, and safety.
Strives for excellence of service as described in the CARE Manual.
Responds to the following Shore Health System codes: Code Pink, Code D, Code Yellow, Code Red (in the immediate area).

Qualifications
MINIMUM EDUCATION, EXPERIENCE AND LICENSE/CERTIFICATIONS REQUIRED:
Food service/preparation, customer service or related experience/equivalent training preferred.
Demonstrated ability to follow instructions and recipes.
Exposed to heat, wetness, fumes, solutions, and other similar elements. Subject to cuts, burns, etc.
Light to moderate lifting.
