Complies with OSHA/British Columbia Workers Compensation Act and Occupational Health and Safety Regulation requirements and Risk Management programs and policies, adheres to safety rules and regulations, and practices safety procedures at all times including Personal Protective Equipment (PPE), fire extinguishers, Safety Data Sheets (SDS), and Lockout Tagout procedures.
Responsible for performing other Dining Services duties when assigned by community leadership in the following areas, but not limited to:
Performs dishwashing tasks to properly wash and sanitize all dishes and china, silverware, glassware, utensils, and cookware.
Operates dish machine(s) according to manufacturer instructions.
Performs light janitorial duties, including but not limited to sweeping work areas, sanitizing production areas, and emptying trash.
Cleans assigned kitchen equipment, including but not limited to stoves, ovens, fryers, microwaves, mixers, slicers, refrigerators, freezers, worktables, prep sinks, ice makers, coffee machines, hoods, and ventilation screens.
Assists with service in the dining areas as needed.

Qualifications:
One (1) year job related experience including food preparation in a restaurant, hotel, or other similar environment.
High School Diploma/GED.
Maintain the following certifications and ongoing training and re-education as required by Sunrise and regulations and laws as applicable:
CPR Certificate and First Aid Certificate.
ServSafe® Manager Certificate.
Local Health Department Food Handler Card.
Prior culinary apprenticeship or training a plus.
Written and verbal skills for effective communication.
Strong organizational and time management skills.

Sushi Cooks are responsible for the preparation, production and presentation of all menu items with a focus on sushi, maki, nigiri and sashimi.
Essential Functions
Prepare food items and ingredients needed for menu items (including but not limited to sushi, maki, nigiri and sashimi) according to prescribed recipes and/or special requests
Butcher whole fish and cut, trim and prepare consumer-sized portions of fish
Ability to use knives proficiently including but not limited to sushi and sashimi knives
Safely and effectively use and operate all necessary tools and equipment, including knives
Available to work a variety of hours, days and shifts, including weekends
Ability to effectively communicate in order to perform and follow job requirements in written and spoken direction
Ability to multitask calmly and effectively in a busy, stressful environment
Work in a confined, crowded space of variable noise and temperature levels
Able to move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, and occasionally move and/or lift up to 50 pounds
Ability to stand and walk for an entire shift and move safely through all areas of the restaurant, which may include stairs, uneven or slick surfaces
Key Responsibilities and Duties
Follow all prescribed portioning controls and par levels and maintain food safety and quality standards
Ability to read a thermometer correctly and efficiently
Communicate any food delays or issues to Coordinator
Accurately account for all items coming out of the kitchen
Understand and follow the food allergy procedure and special orders/restrictions
Comply with all safety and sanitation guidelines and procedures
Follow all rules, policies, procedures and conditions of employment, including those outlined in the Employee Handbook
Get along well with others and be a team player
Other duties will be assigned as needed

Job Description
HRDI is seeking full-time and floater Residential Cooks to assists in providing quality food services which meets resident needs.
In addition, the Residential Cook will:
Prepares meal for population of facility
Appropriately follows and posts menus as directed by agency nutritionist or supervisor
Maintains inventory of foods and food supplies, and submits requisition of needs to appropriate staff
Maintains equipment in clean and proper operating order
Responsible for safety and sanitation of all foods stored, prepared and served
Responsible for teams of clients and other staff as they assist in preparation and storage of food
Provides training to food service assistants
Responsible for following all public health rules and regulations regarding food service delivery
Prepares monthly reports on operation of Food Preparation Component of Program
All duties are to be in accordance with the City of Chicago, and State of Illinois guidelines regarding food service
All other duties as assigned
HRDI is also seeking a Food Service Supervisor for our residential program. Supervisory experience and dietician license required.

Qualifications
This position requires a minimum:
Must posses a valid City and State Food Service license
High School diploma or GED equivalent
Special training in food service and nutrition recommended
Thorough understanding of public health rules and regulations regarding food safety and sanitation
