Produce high-quality hot and cold foods based on recipes developed by the Chef and Executive Chef

Prepare meals for 50-310 people per meal
Prepares all meals on time as scheduled or assigned.
Ensures special food requirements for both campers and staff, e.g., food allergies, gluten free and vegetarian diets are managed with utmost importance for 100% accuracy
Responsible for ensuring food items are readily available for staff on weekends.
Partners with administrative staff to plan, prepare, and deliver timely and accurate pack-out and travel camp food
Works with Kitchen Manager to create prep sheets for special event orders
Check menus daily for any required advance preparation; Prepare and assign production and prep work for Prep/Line Cooks to complete
Observe methods of food preparation, cooking, and sizes of portions to ensure food is adequately prepared
Ensure proper cooking methods and recipes are followed
Perform quality audits and specs checks, including temp checks on food items and dish machines
Ensures that CDPHE Food Regulations are being followed by all kitchen staff; Performs daily temperature checks for coolers and products
Assists with breakdown of workstation and completion of closing duties ensuring all Prep/Line Cooks' and Dishwashers' assignments are completed before they sign out
Performs check in of all incoming food supply orders (verifies amount ordered vs invoice amount, ensures it is properly stored and rotated) as directed by Kitchen Manager

Ensure and promote the sanitary integrity of the facility, equipment, and food products
Maintains kitchen cleanliness and proper food preparation according to state and local health department code requirements and departmental procedures
Maintains overall sanitation, health, cleanliness, and safety standards for food preparation areas, cooking services, and dishes and utensils

The cook for the dinner program, food truck, admin lunch, and Innovation Catering prepares hot / cold items by following specified recipes for approved menus and daily production sheets in accordance with Volunteers of America Colorado standards and procedures.
ESSENTIAL DUTIES AND RESPONSIBILITIES
* Prepares & preps items needed for the evening meal dinner program Wednesday & Thursday evenings, Food Truck lunch meal Tuesday & Thursday, Admin Lunch Tuesday - Thursday, and any Innovation Catering orders or special Volunteers of America Colorado Special Agency Events.
* Drives the food truck to sites and delivery of evening meal dinner program meals.
* Assists in MOW main kitchen as time allows. Working with the MOW program manager for specific tasks.
* Uses acquired culinary skills to produce high quality products, ensuring excellent taste, appearance, texture and client acceptability.
* Portions meals according to meal day, type and quantity. Minimizing waste and leftover items.

* Uses and maintains kitchen equipment in a clean, safe and appropriate manner.

What you will do:
The Cook is responsible for the quality, quantity, tastiness, and freshness of all Hot Choice Buffet products. The Cook pays special attention to speed, cleanliness, organization, and product specifications.
RESPONSIBILITIES:
* Prepares Hot Choice Buffet products, including Carving and Display Cooking products, according to Golden Corral recipes and procedures.
* Grills all items according to Golden Corral standards to ensure quality.
* Ensures that every fried product is always fresh and hot.
* If the Buffet Attendant is unavailable, the Cook restocks the items at the Display Cooking Station.
* If the Carver is unavailable, assists guests with carved meat options.
* Complete use and following of the buffet production system to insure quality and shelf life compliance.

* Uses the Hot Choice Buffet Production Guide and the Display Cooking Hot Cook Production Guide to maintain an inventory of all hot cook products.

* Restocks and rotates food products by using the first-in, first-out method (FIFO).
* Ensures that that Hot Cook area and all small wares are clean and checks dishes for cleanliness before using them.
* Performs duty roster and Cleanliness, Service, and Quality (CSQ) responsibilities.
* Follows local health department laws.
* Keeps Char Grill clean and scraped to ensure product quality and sanitation.
* Ensures that Hot Choice Buffet products, including Display Cooking products, are always hot and fresh for the guests.
* Knows and follows position responsibilities as they relate to just-in-time delivery.
* Is friendly and courteous to guests and assists them with the products.
