Responsibilities: Oversees the purchase of food and supplies within budget and maintains a supply to adequately cover each meal. Provides technical guidance and administrative direction over diet planning, menu formulation, preparation and service of regular and therapeutic diets. In the RTF program will complete an initial assessment within the first 10 days of admission. 4. Prioritizes schedule to assess the needs of the incoming residents as needed. Ensures that upon intake special nutritional needs are communicated to the FSD and modifies menus to accommodate for special diet needs. 5. Knowledge of frequently prescribed medications, interactions and nutritional impact of residents. 6. Prepares diet labels and menus for all special diets in our residential care programs. 7. Under the direction of the FSD creates menus that can be prepared and delivery in a commissary kitchen and fit into the programs budgets. 8. Produces annual, semi-annual clinical assessments and care plans for residential programs as required. 9. Attends Multi-D meetings upon referral. 10. Must have a strong understanding of the current National School Lunch Program and ensures compliance with menu planning in conjunction with the FSD. 11.
