We produce daily for our 3 cafes in Long Beach and San Pedro and a small list of beloved wholesale partners (restaurants and cafes)
Responsibilities
Proper proofing, topping and baking of croissant pastries, cookie, scones + more
Quality control of baked goods
Proper scaling, mixing of doughs and batters
Proper handling and fermentation of sourdough breads
Packaging and packing for wholesale orders
Proper scooping, portioning and finishing of baked goods
Operating bakery machinery including but not limited to: deck oven, rotating rack ovens, large dough mixers, food processors, etc.

Qualifications
Experience working in a high volume bakery, kitchen or equivalent culinary school experience
Attention to detail and sense of urgency
Self-reflective, coachable
Basic match + writing skills required, knowledge of baker's percentages is helpful for bread
Passion for and interest in sourdough bread, croissant pastries and large-scale scratch baking.
Experience hand-shaping breads and croissants

Colossus tiene 2 turnos principales:
2 AM - 10 AM (Horneado + Producción de Pan)
10 AM - 6 PM (Producción de Pastelería + Preparación)
Producimos diariamente para nuestras 3 cafeterías en Long Beach y San Pedro, y para una pequeña lista de apreciados socios mayoristas (restaurantes y cafeterías).
Responsabilidades
Levado, cobertura y horneado correctos de croissants, galletas, scones y más.
Control de calidad de productos horneados.
Escalado y mezclado correctos de masas.
Manejo y fermentación correctos de panes de masa madre.
Empaquetado y embalaje para pedidos al por mayor.
Sacado, porcionado y acabado correctos de productos horneados.
Operación de maquinaria de panadería, incluyendo, entre otros: horno de pisos, hornos de carro rotativo, amasadoras grandes, procesadores de alimentos, etc.

Requisitos
Experiencia trabajando en una panadería, cocina o escuela culinaria de alto volumen
Atención al detalle y sentido de urgencia
Autorreflexivo, con disposición para aprender
Se requieren habilidades básicas de escritura y correspondencia; el conocimiento de los porcentajes de panadería es útil para el pan.
Pasión e interés por el pan de masa madre, los croissants y la repostería artesanal a gran escala.
Se requiere hablar inglés.
Experiencia en la elaboración manual de panes y croissants.
