Procedure Duties:
Check dough sheet for running order and record lot codes and sign off.
Adhere to posted scheduled shift and prompt attendance for each shift.
Always scale ingredients according to PRIMS formula specifications and any formula adjustments.
Scale up necessary setup buckets for dough sides. Label any small batch buckets on the carts per dough mix. Communicate with mixer as to dry scale set up on carts.
Fill ingredient barrels during and at the end of your shift. Record lot code on log sheets.
Keep supervisor informed of any inconsistencies in ingredients or stock inventory changes.
Properly record ingredient usage.
Follow all GMP/Food Safety/Safety policies during the shift. Report to supervisor any occurrences or observations as to possible correction.

Sanitation Duties:
Properly Lock out/Tag out any applicable equipment before cleaning.
