As a Head Baker at Ole & Steen you will oversee creation of real Danish bread and pastries. You will produce artisan Danish breads, rolls, and laminated dough as a part of an enthusiastic and international team, The ideal candidate must be enthusiastic about baking, love long fermentation times, and enjoy working as a team. You must enforce health and safety standards. The goal is to enhance customer and employee satisfaction so that we can maintain and expand our clientele and you must expect to produce a high volume of products for our stores. This role is ideal for someone who is interested in learning about our Danish heritage and able to manage the daily operation of a bakery. RESPONSIBILITIES ● Oversee daily production of breads, ryes, rolls, and pastries according to our traditional Danish recipes ● Observe and maintain the quality of products being baked, and adjust oven temperatures, baking time accordingly ● Management of a team of up to 6 - handling daily scheduling ● Management of bakery, including organization and cleanliness of dried storage and fridges ● Measuring and combining ingredients and using mixers, heat sources, and other equipment ● Checking-in and accepting deliveries from our purveyors● Follow portion standards ● Monitor inventory of ingredients for production ● Properly label and store ingredients ● Check equipment to ensure that it meets health and safety regulations ● Maintain a clean and orderly bake shop and adhere to health and safety standards QUALIFICATIONS & REQUIREMENTS ● Completion of a Culinary School program or apprenticeship preferred ● Positive and problem-solving attitude ● A genuine passion and knowledge for bread ● Dependable and hard-working ● 2-4 years of professional baking experience preferred.     PRIMARY RESPONSIBILITIES: The Baker role is responsible for the baking, decorating and overall presentation of all Bakery products sold in the storefront. PERFORMANCE RESPONSIBILITIES: Produce our entire line of baked goods: quality cakes, cupcakes, cookies, biscotti and any other production items as delegated by a manager Ensure exceptional product by following recipes, understanding prep procedures, and maintaining raw materials quality Make sure our baked goods are baked and decorated according to Carlo's Bakery product standards Keep up with pace of store and customer flow Avoid overproduction during slow business weeks Rotate product in freezer/walk-in using FIFO method Understand proper use of all equipment: ovens, mixers, sheeters, scales, walk-in, and freezer Maintain a clean production area Clean and sanitize all equipment, work areas, containers and utensils Be quick, accurate and organized Respect your customers' and co-workers' space and time Prepare special orders to ensure customer specifications are met Make sure customers receive exceptional customer service at all times Ensure operations are in accordance with food safety and sanitation standards Greet, assist, provide efficient service and thank guests in a prompt, courteous, friendly and business-like manner in order to promote the company image as a service-oriented operation Guide FOH staff on product questions and offer assistance in finding or suggesting product selection to customers Take specialty cake orders as requested by customers (e.g., special occasion cakes, party platters, etc.) Enter all specialty cake sales information into Salesforce Perform other duties as directed by a manage
